Bellini’s Bar

Italy already had a long tradition of marinating fresh peaches in wine before Giuseppi Cipriani started bartending at Harry’s Bar in Venice, but it was his creativity that took the concept to new heights when he mixed white peach purée with sparkling Prosecco and birthed the now famous Bellini in 1948.  The drink was simple and instantly became a classic at Harry’s Bar (a favorite haunt of Ernest Hemingway) and later at its New York location. Giuseppi reportedly named the popular Bellini after Giovanni Bellini, a 15th-century Venetian painter.
